04 - 1 cup ripe peaches, diced (fresh or thawed frozen; about 2 medium peaches)

05 - 16 whole graham cracker sheets

# Instructions:

01 - Line an 8-inch square baking pan with parchment paper or plastic wrap, leaving an overhang on all sides.
02 - In a medium bowl, combine Greek yogurt, honey, and vanilla extract. Stir until smooth.
03 - Gently fold diced peaches into the yogurt mixture.
04 - Place 8 graham cracker sheets in a single layer at the bottom of the prepared pan, trimming edges if necessary.
05 - Spread the peach and yogurt filling evenly over the graham crackers.
06 - Place the remaining 8 graham cracker sheets on top of the filling, pressing lightly to secure.
07 - Cover the pan and freeze for at least 4 hours until firm.
