01 - 1 pound sirloin steak, cut into 1-inch cubes

02 - 1 pound baby potatoes, quartered
03 - 4 cloves garlic, minced
04 - 2 tablespoons fresh parsley, chopped

# Instructions:
01 - In a large skillet over medium-high heat, add 1 tablespoon olive oil. Add the quartered potatoes and season with salt, pepper, and smoked paprika. Cook, stirring occasionally, until potatoes are golden and tender, about 12 to 15 minutes. Remove potatoes to a plate and cover to keep warm.
02 - Pat steak cubes thoroughly dry using paper towels and season evenly with salt and black pepper.
03 - In the same pan, add the remaining olive oil. Once hot, arrange steak bites in a single layer. Sear for 2 to 3 minutes per side, turning for an even brown crust and cooking to preferred doneness. Work in batches if necessary. Transfer steak to the plate with potatoes.
04 - Reduce heat to low. Add unsalted butter and minced garlic to the skillet, stirring until aromatic, about 30 seconds.
05 - Return steak and potatoes to the skillet, tossing everything thoroughly in the garlic butter. Sprinkle chopped fresh parsley over the top and serve immediately.
