01 - 2 cups cooked, mashed potatoes

02 - 1 cup cooked ham, finely chopped

→ Vegetables & Aromatics

03 - 1 small onion, finely diced
04 - 2 tablespoons fresh parsley, chopped (optional)

→ Pantry & Bindings

05 - 1 large egg
06 - 1/3 cup all-purpose flour, plus extra for dusting
07 - 1/2 teaspoon salt
08 - 1/4 teaspoon ground black pepper

# Instructions:

01 - In a large bowl, mix mashed potatoes, chopped ham, diced onion, parsley if using, egg, flour, salt, and pepper until a thick, uniform mixture forms.
02 - With floured hands, form the mixture into eight patties approximately 2.5 inches in diameter and 1/2 inch thick; lightly dust each with flour.
03 - Warm the vegetable oil or butter in a large skillet over medium heat.
04 - Cook patties in batches, frying each side for 3 to 4 minutes until they develop a golden brown, crisp exterior. Avoid overcrowding the pan.
05 - Place cooked patties on a paper towel–lined plate to absorb excess oil. Serve immediately while hot.
