# Ingredients:

01 - 1 lb ground beef
02 - 1/2 cup breadcrumbs
03 - 1/4 cup milk

07 - 1/2 teaspoon garlic powder
08 - 1/2 teaspoon onion powder
09 - 1/2 teaspoon salt
10 - 1/4 teaspoon black pepper

11 - 1 cup BBQ sauce

→ For the Mac and Cheese

12 - 7 ounces elbow macaroni
13 - 2 tablespoons unsalted butter
14 - 2 tablespoons all-purpose flour
15 - 2 cups whole milk
16 - 2 cups shredded sharp cheddar cheese
17 - 1/4 teaspoon ground mustard (optional)
18 - Salt and pepper, to taste

19 - 4 large sub rolls, split
20 - 2 tablespoons unsalted butter, melted (for brushing rolls)

# Instructions:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper. In a large bowl, combine ground beef, breadcrumbs, milk, egg, Parmesan cheese, parsley, garlic powder, onion powder, salt, and black pepper. Mix until just blended, then shape into 16 golf ball-sized meatballs. Arrange evenly on the sheet and bake for 18 to 20 minutes until fully cooked. Toss warm meatballs with BBQ sauce in a large bowl.
02 - Boil macaroni in salted water as per package directions. Drain well and set aside.
03 - In a saucepan over medium heat, melt butter and whisk in flour. Cook for 1 minute. Gradually add milk, whisking constantly until smooth. Simmer until slightly thickened, 3 to 4 minutes. Off heat, stir in cheddar cheese and ground mustard, if using, until cheese is melted. Season with salt and pepper.
04 - Fold drained macaroni into the cheese sauce until completely coated.
05 - Preheat oven broiler to high. Arrange split sub rolls on a baking sheet and brush interiors lightly with melted butter. Broil for 1 to 2 minutes until golden brown.
06 - Nestle 4 BBQ meatballs inside each toasted roll. Generously spoon mac and cheese over the meatballs. Sprinkle mozzarella cheese on top, if desired.
07 - Broil subs for 2 to 3 minutes, until cheese is bubbling and lightly browned. Garnish with chopped parsley if preferred, and serve hot.
