Neon Noodle Cloud (Print)

Whimsical noodles in creamy, cloud-like sauce—colorful, vibrant, and perfect for lively gatherings.

# Ingredients:

→ Noodles

01 - 10.5 oz dried wheat noodles or ramen noodles
02 - Food coloring gels in pink, blue, yellow, and green (gel coloring preferred for vibrancy)

→ Cloud Sauce

03 - 3/4 cup whole milk or plant-based milk
04 - 4.25 oz cream cheese or vegan alternative
05 - 1 tablespoon unsalted butter or vegan butter
06 - 2 tablespoons grated parmesan cheese or nutritional yeast for vegan
07 - 1 teaspoon cornstarch
08 - 1/4 teaspoon salt
09 - 1/4 teaspoon white pepper

→ Garnish

10 - 2 scallions, finely sliced
11 - 1 tablespoon toasted sesame seeds
12 - Edible flowers or microgreens (optional)

# Instructions:

01 - Bring a large pot of water to a rolling boil, then divide the boiling water evenly amongst several heatproof bowls according to the number of colors you wish to create.
02 - Stir a small amount of gel food coloring into each bowl, mixing thoroughly to achieve the desired vibrancy in each shade.
03 - Divide noodles into equal portions and cook each batch separately in the colored boiling water for 2 to 3 minutes less than the package instructions. Rinse each portion under cold water to halt cooking and set aside.
04 - In a saucepan over medium heat, melt butter, then incorporate cream cheese, stirring continuously until a smooth mixture forms.
05 - Whisk in milk, parmesan, cornstarch, salt, and white pepper. Continue to cook, stirring constantly, until the sauce thickens and develops a creamy consistency, approximately 5 minutes.
06 - Add the colored noodles to the sauce, gently folding to coat. Maintain separation of colors to create a cloud effect, or softly swirl for a marbled appearance.
07 - Serve the vibrant noodles immediately, garnished with sliced scallions, toasted sesame seeds, and a scattering of edible flowers or microgreens if desired.
