# Instructions:
01 - Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners or lightly grease each cup.
02 - In a large mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly distributed.
03 - In a separate bowl, blend ricotta cheese, eggs, whole milk, melted butter, orange zest, orange juice, and vanilla extract. Whisk until smooth and homogenous.
04 - Pour wet mixture into dry ingredients. Stir gently until just combined; avoid overmixing. Minor lumps in the batter are acceptable.
05 - Evenly distribute batter into muffin cups, filling each approximately three-quarters full.
06 - Sprinkle each muffin with coarse sugar and extra orange zest if desired.
07 - Place in oven and bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
08 - Remove muffins from oven and allow to rest in the pan for 5 minutes before transferring to a wire rack to cool completely.
