# Instructions:

01 - In a medium bowl, whisk together all-purpose flour, baking powder, and salt until evenly combined.
02 - In a large bowl, beat unsalted butter and granulated sugar with an electric mixer until light and fluffy, approximately 2 to 3 minutes.
03 - Add the large egg, vanilla extract, and almond extract if using, then beat until fully integrated.
04 - Gradually add the dry ingredient mixture to the wet ingredients, mixing just until dough forms without overworking.
05 - Divide the dough in half, shape each into a disc, wrap with plastic wrap, and refrigerate for at least 1 hour.
06 - Preheat oven to 350°F. Line baking sheets with parchment paper to prevent sticking.
