03 - 1/3 cup honey or maple syrup
04 - 1/4 cup unsalted butter, melted
05 - 1/2 teaspoon vanilla extract
06 - Pinch of salt
→ Homemade Gummies
07 - 1 cup 100% fruit juice, such as apple, berry, or orange
08 - 2 tablespoons unflavored gelatin
09 - 3 tablespoons honey or agave syrup
→ Mash-Up Toppings
10 - 1 cup freeze-dried fruit, such as strawberries or raspberries, lightly crushed
11 - 1 cup freeze-dried candy, such as Skittles or marshmallows, crushed or chopped
# Instructions:
01 - Line an 8x8-inch baking pan with parchment paper for easy removal.
02 - In a large bowl, thoroughly combine rolled oats, almond butter, honey, melted butter, vanilla extract, and a pinch of salt. Press mixture evenly into the lined pan, ensuring uniform thickness. Refrigerate base while preparing gummies.
03 - Pour fruit juice into a small saucepan. Sprinkle gelatin on top and allow it to bloom for 5 minutes. Place saucepan over low heat, stirring continuously until gelatin dissolves smoothly. Incorporate honey and blend well. Pour mixture into a parchment-lined small baking dish and refrigerate for 45 to 60 minutes until fully set.
04 - Once set, transfer gummies onto a cutting board and slice into small cubes.
05 - Remove chilled oat base from the refrigerator. Distribute gummy cubes, crushed freeze-dried fruit, and chopped freeze-dried candy evenly over the surface. Gently press toppings into the oatmeal layer for secure adhesion.
06 - Return the assembled bars to the refrigerator for an additional 10 to 15 minutes to ensure toppings are set.
07 - Lift snack bar block out of the pan using parchment overhang. Place on a cutting board and slice into 12 uniform bars.
