Spiked Grilled Cheese Sriracha (Print)

Crispy grilled cheese layered with sharp cheddar, Monterey Jack, and a spicy sriracha mayo spread.

# Ingredients:

→ Bread & Cheese

01 - 4 slices hearty sourdough or white sandwich bread
02 - 4 slices sharp cheddar cheese (4.2 oz)
03 - 2 slices Monterey Jack cheese (optional, 2.1 oz)

→ Sriracha Mayo

04 - 3 tablespoons mayonnaise
05 - 1 to 1.5 tablespoons sriracha sauce, adjust to taste
06 - 1 teaspoon fresh lime juice

→ Butter

07 - 2 tablespoons unsalted butter, softened

# Instructions:

01 - Combine mayonnaise, sriracha sauce, and lime juice in a small bowl until smooth. Adjust sriracha to preferred heat level.
02 - Spread a thin layer of softened butter on one side of each bread slice; these will be the sandwich exteriors.
03 - Place cheddar and optional Monterey Jack cheese evenly on the unbuttered sides of two bread slices. Top with the remaining slices, buttered side facing out.
04 - Spread a generous layer of sriracha mayo over the buttered outside of each sandwich.
05 - Heat a nonstick skillet or griddle over medium-low heat.
06 - Place sandwiches mayo side down in the skillet. While the first side cooks, spread sriracha mayo on the remaining top sides.
07 - Grill each side for 3 to 4 minutes, pressing gently with a spatula, until bread is golden brown and crisp and cheese is melted.
08 - Remove sandwiches from skillet, let rest for 1 minute, then slice and serve warm.

# Pro Tips:

01 -
  • It takes less than 20 minutes from craving to eating, which means this becomes your go-to when you need real food fast.
  • The sriracha mayo adds just enough heat and tang to make you forget this ever felt boring.
  • Melted cheese combined with crispy bread is genuinely hard to mess up, even on your worst cooking day.
02 -
  • Temperature control is everything—medium-low heat lets the cheese melt while the bread toasts, but high heat will burn the outside before the inside even gets warm.
  • Your sriracha brand matters more than you'd think, so taste the mayo mixture before you commit it to the bread.
03 -
  • Softening your butter at room temperature for just 10 minutes makes spreading it easier and prevents you from accidentally tearing your bread.
  • If your skillet runs hot, lower the heat even further—burnt bottoms are harder to recover from than taking an extra minute per side.
