03 - Add creamy cashew butter, pure maple syrup, vanilla extract, and salt. Blend on low until a sticky dough develops, scraping sides as needed.
04 - Transfer dough to a bowl. Mix in crushed freeze-dried strawberries until evenly distributed.
05 - With a 2-tablespoon scoop or damp hands, roll dough into balls and arrange on a parchment-lined tray with space between each.
06 - Place tray in freezer for 20 to 30 minutes to firm up the bites.
07 - Combine white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring each time, until melted and smooth, about 1 1/2 minutes total.
08 - Remove bites from freezer. Drizzle with melted white chocolate and immediately sprinkle with additional crushed freeze-dried strawberries.
09 - Return bites to refrigerator for a few minutes to set chocolate. Transfer to airtight container, storing half chilled for immediate snacking and the remainder frozen for longer storage.
