Crispy Cabbage Steaks With Feta (Print)

Golden roasted cabbage crowned with feta and balsamic glaze. Elegant Mediterranean side dish in 40 minutes.

# Ingredients:

→ Vegetables

01 - 1 large green cabbage
02 - 2 tablespoons olive oil
03 - 1/2 teaspoon sea salt
04 - 1/4 teaspoon ground black pepper

→ Cheese

05 - 3.5 ounces feta cheese, crumbled

→ Garnish & Sauce

06 - 3 tablespoons balsamic glaze
07 - 1 tablespoon fresh parsley, chopped
08 - 1 teaspoon lemon zest

# Instructions:

01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper.
02 - Remove tough outer leaves from cabbage. Slice into 4 thick steaks, approximately 1 inch thick each.
03 - Arrange cabbage steaks in a single layer on the prepared baking sheet.
04 - Brush both sides of each cabbage steak with olive oil. Season evenly with salt and pepper.
05 - Roast for 20 minutes. Carefully flip steaks and roast for an additional 8 to 10 minutes until golden and crispy at the edges.
06 - Remove from oven. Immediately sprinkle crumbled feta cheese over hot cabbage steaks.
07 - Drizzle generously with balsamic glaze. Garnish with parsley and lemon zest. Serve warm.

# Pro Tips:

01 -
  • Looks fancy enough to serve guests but honestly takes less effort than roasting a sheet pan of vegetables.
  • The cabbage gets insanely crispy on the edges while staying tender inside, like the best roasted vegetable you've ever had.
  • Naturally vegetarian, gluten-free, and works as either a side or a light main course depending on your mood.
02 -
  • Don't cut your cabbage steaks too thin or they'll shred into pieces instead of staying intact—2.5 cm is the sweet spot.
  • Flipping them halfway through roasting is non-negotiable if you want both sides crispy; the first side gets most of the color, but the second side needs time to caramelize too.
03 -
  • Pat your cabbage steaks completely dry before oiling them—any moisture hanging around will steam instead of crisp, and you want every bit of that golden caramelization.
  • Make your own balsamic reduction if you have five minutes and basic vinegar—it's richer and more concentrated than store-bought glaze, and your guests will taste the difference.
