# Instructions:

01 - Set oven to 350°F (175°C). Line a baking sheet with parchment paper.
02 - In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg until evenly distributed.
03 - In a large bowl, beat eggs and granulated sugar until pale and slightly thickened. Blend in vegetable oil, vanilla, and almond extract until fully incorporated.
04 - Gradually stir dry ingredient mixture into wet ingredients just until combined, avoiding overmixing.
05 - Gently fold dried cranberries, pistachios, sliced almonds, and dried apricots into the dough.
06 - Divide dough in half. With lightly floured hands, shape each half into a log approximately 12 inches long and 2 inches wide onto the prepared baking sheet.
07 - Bake logs for 20 to 22 minutes until lightly golden and firm. Remove from oven and allow to cool for 10 minutes.
08 - Lower oven temperature to 300°F (150°C).
