Ricotta Herb Bacon Frittata (Print)

# Instructions:

01 - Preheat oven to 375°F (190°C).
02 - In a large oven-safe skillet, cook bacon over medium heat until crispy. Remove bacon, drain on paper towels, and roughly chop. Reserve 1 tablespoon bacon fat in the skillet; discard excess.
03 - Add olive oil to skillet with reserved bacon fat. Sauté onion over medium heat until translucent, about 3 minutes. Add chopped spinach and cook until wilted, about 2 minutes.
04 - In a large mixing bowl, whisk eggs, milk, ricotta, Parmesan, salt, and pepper until smooth. Stir in chives, parsley, basil, cooked bacon, onions, and spinach.
05 - Pour the mixture into the skillet, spreading evenly. Cook on medium-low heat for 4 to 5 minutes, until edges begin to set.
06 - Transfer skillet to preheated oven. Bake for 15 to 18 minutes, until set and lightly golden on top.
07 - Remove from oven and allow to cool for 5 minutes before slicing. Serve warm or at room temperature.
