Instructions
- Prep Oven and Noodles:
- Preheat oven to 180°C (350°F). Cook ramen noodles in boiling water for 2 minutes less than package instructions. Drain and set aside.
- Make Meat Sauce:
- Heat vegetable oil in large skillet over medium heat. Add onion, garlic, and ginger. Sauté until fragrant and translucent, about 3 minutes. Add ground pork. Cook until browned, breaking up meat with a spoon. Stir in gochujang, red pepper flakes, crushed tomatoes, soy sauce, rice vinegar, and sugar. Season with salt and pepper. Simmer for 10 minutes until slightly thickened.
- Mix Cheese Layer:
- In a bowl, mix ricotta cheese, egg, half the mozzarella, and half the parmesan until combined.
- Layer Lasagna:
- In baking dish (about 22x30 cm), spread thin layer meat sauce. Add layer of ramen noodles (about one pack per layer). Spread a third of ricotta mixture over noodles, then top with a third of meat sauce. Repeat layers twice more, finishing with remaining meat sauce.
- Add Toppings and Bake:
- Sprinkle remaining mozzarella and parmesan over top. Cover with foil and bake 20 minutes. Remove foil and bake another 10 to 15 minutes, until cheese is bubbling and lightly golden.
- Finishing Touches:
- Let stand 10 minutes before slicing. Garnish with green onions if desired.
