Ingredients
- Cake: 1 1/4 cups (160 g) all-purpose flour, 1 tsp baking powder, 1/4 tsp salt, 1/2 cup (100 g) granulated sugar, 1/2 cup (110 g) unsalted butter (softened), 2 large eggs, 1/2 cup (120 ml) whole milk, 1 1/2 tsp ground cinnamon, 1 tsp vanilla extract
- Cinnamon Sugar Coating: 1/2 cup (100 g) granulated sugar, 1 1/2 tsp ground cinnamon
- Frosting (for binding): 1/4 cup (60 g) unsalted butter (softened), 1 cup (120 g) powdered sugar, 2 tbsp whole milk, 1/2 tsp vanilla extract, pinch of salt
- Decoration: 12 oz (340 g) white or colored candy melts, candy eyes (store-bought), assorted sprinkles, mini chocolate chips, colored sugar, lollipop sticks
Instructions
- Prepare pan:
- Preheat oven to 350°F (175°C). Grease and flour an 8-inch (20 cm) square cake pan.
- Make dry mix:
- In a bowl, whisk together flour, baking powder, salt, cinnamon, then set aside.
- Cream butter and sugar:
- Cream butter and sugar in a large bowl until light and fluffy. Add eggs one at a time, beating after each, then mix in vanilla.
- Combine batter:
- Add half of the dry ingredients to the butter mixture, mix, then add milk, then the remaining dry ingredients. Mix until just combined.
- Bake cake:
- Pour batter into prepared pan. Bake 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
- Prepare frosting:
- While cake cools, beat butter until creamy, add powdered sugar, milk, vanilla, and salt. Beat until smooth and fluffy.
- Make cake balls:
- Crumble cooled cake into a large bowl. Add frosting, a spoon at a time, mixing until mixture holds together but is not too wet. You may not need all the frosting.
- Form balls:
- Roll mixture into 1-inch (2.5 cm) balls. Place on a baking sheet lined with parchment paper. Chill in freezer for 15 minutes.
- Melt candy:
- Melt candy melts as per package instructions.
- Insert sticks:
- Dip tip of each lollipop stick in melted candy, insert halfway into cake ball.
- Coat and decorate:
- Dip each pop into melted candy to coat. Tap off excess. Sprinkle with cinnamon sugar, attach candy eyes, and decorate with sprinkles or chocolate chips for monster features.
- Set pops:
